Job Description:
JOB DESCRIPTION: This position contributes to the success of
Eatzi's by partnering with the General Manager, Executive Chef
operations teams to develop a compelling market for "Meals for the
Taking," all with the goal of developing an Industry Leader in
quality employment, quality food, business growth, value perception
and profitability. RESPONSIBILITIES: -- Production and supervision
of daily bread production. Responsible for costing and ordering
bakery products. Responsible for portion and inventory control.
Create production schedules to determine variety and quantity of
goods to bake. Work to maintain the integrity of our recipes and
build the bread sku's from a complimentary perspective, while
remaining true to the vision of our brand. Train, develop and
communicate with all bakers as well as assess performance on a
regular basis. Partner and inspire the market level staff to
establish and maintain a sense of self pride and passion of food,
service and high standards. Implement tools and practices to help
ensure production system is working and providing the desired
results. Give "HONEST," direct information regarding Bakery and
Bakery team performance to General Manager on a regular basis.
SKILLS/QUALIFICATIONS: Global knowledge of Bread with the knowledge
and experience to execute in an HMR environment. A minimum of 5+
years, upscale Bakery experience. Knowledge and experience of high
volume "meal-market" food production and merchandising. Proven
expertise in R&D. Proven experience in managing and maintaining
food and labor aspects of P&L and budgeting functions for
multiple units. Well-organized, with proven ability to meet
timelines and show results through initiatives. Is results-oriented
and able to set the vision and see the "big picture." Possess
strong leadership skills with an ability to build a team to reach
desired goals. Provides an "out of the box" approach to business.
Able to infuse new ideas, systems and programs to achieve
objectives. Positive, optimistic, enthusiastic and self-confident
attitude. Operates calmly and proactively in stressful and
difficult situations. Communicates and interacts professionally and
respectfully with all levels of individual in the organization.
Background in High-Profile restaurants, hotels, and/or resorts.
Culinary degree preferred. OTHER: WORKING CONDITIONS AND
ENVIRONMENT: Must be able to work independently. Must be able to
respond calmly and make rational decisions. Must be able to
tolerate hot temperatures in excess of 150 degrees and extreme cold
temperatures as low as 5 degrees below zero. Must be able to lift
up to 100 pounds. Must be able to push or pull food carts weighing
up to 250 pounds. Must be able to lift pans of hot foods and bowls
and trays of cold food. Must be able to speak, read, write, and
understand English and speak distinctly and persuasively to others.
Make continuous or repetitive arm-hand movements, such as slicing
or chopping food. Bend or stoop repeatedly over time, such as
removing items from stove, oven or refrigerator. Move objects
between 20-50 pounds short distances (20 feet or less). NOTES: This
