Job Summary

As a hospital Sous Chef, you will help with the commitment UT Southwestern has to provide high quality and efficient care to our patients through nutritional meal options. Serving both Zale Lipshy and Clements University Hospitals, this hospital Sous Chef position will be responsible for creating new and innovative menu options, overseeing kitchen operations, and assisting our culinary leadership team with training and management of staff. Job Duties

Assist Executive Chef in selection, trains and orients, assigns and schedules of section personnel to provide adequate coverage for section operation.
Establish and monitor workflow to promote efficiency in food processing functions so that food is delivered on time to cafeteria, c-store, gift shop, tray line, and catering functions.
Supervise and implement established policies and procedures for section operation. Train and monitor all production personnel in methods of preparation and portion sizes. Develop and implement policies, procedures and methods for food production, in consultation with Executive Chef to achieve high quality and cost-effective meals.
Develop innovative healthful recipes to meet dietary specifications. Assist in implementing policies and procedures for department operation.
Maintain department reports and record and collect statistical data for administrative and regulatory purposes. Keep Executive Chef informed of section activities, needs and problems.
Supervise and participate in sanitation of food production unit. Instruct cafeteria and tray line servers to ensure established procedures regarding menus, portioning, and attractive presentation of food items. Support teamwork and cooperation with co-workers in daily activities. Present constructive feedback regarding system failures and participate in resolution.

Experience and Education

High school diploma or equivalent required.
Five years food service leadership required.
Culinary school or equivalent background preferred.
Hospital or Healthcare experience preferred.
